These look amazing! Do you really get to eat the entire recipe (of 5) for 49 calories? I must be reading something wrong. It says serving size is 5 and it yields 5 cookies.

No each one is 49 calories. 🙂

Will this recipe work using cottage cheese instead of ricotta?

Just put a batch in the oven. I modified the recipe with quinoa flakes, unsweetened applesauce, 1% cottage cheese, and whey protein peanut butter. If these modifications work I will be elated as cookies are my downfall at night! Each cookie will have 8 grams of protein!

I just made these…I doubled the recipe and used 4 egg whites instead of the whole eggs. I also used only 1 T. of almond butter. The batter was pretty runny, so I poured it into a mini cookie sheet and sprinkled 1 T. Enjoy Life Mini Chocolate chips on top. They turned out like blonde brownies. I will be making this again! Thanks Jen!
